Tomatillo Salsa
1 lb tomatillos

Remove and discard tomatillo husks; rinse tomatillos well. Cook tomatillos
covered in boiling salted water for 4 to 6 minutes or until very tender. Drain
tomatillos. Combine onion, jalapeno, and garlic in food processor or blender.
Add tomatillos; process until coarsely chopped. Scoop into a bowl. Add juice;
season with salt. Stir in cilantro. Let stand 30 minutes before serving. Add
additional lime juice and salt, if necessary. Serve at room temperature. Cover
and chill for longer storage.
Serves 6
