Recipe of the Month

Tomatillo Salsa

1 lb tomatillos
1 medium onion, peeled and quartered
1 to 2 jalapeno chilies, seeded
1 clove garlic, chopped
3 to 4 T fresh orange juice
3 to 4 T fresh lime juice
1/4 c minced fresh cilantro

 

Remove and discard tomatillo husks; rinse tomatillos well. Cook tomatillos covered in boiling salted water for 4 to 6 minutes or until very tender. Drain tomatillos. Combine onion, jalapeno, and garlic in food processor or blender. Add tomatillos; process until coarsely chopped. Scoop into a bowl. Add juice; season with salt. Stir in cilantro. Let stand 30 minutes before serving. Add additional lime juice and salt, if necessary. Serve at room temperature. Cover and chill for longer storage.
